Pagus is an aged cow’s milk cheese with a speacial history.
This cheese is dedicated to Pag, Paška sirana cheese factory and generations of families that Paška sirana gathered under its roof. It is not just cow’s milk cheese. It is much more than that. It is a memory on all those good and hard times, it is a symbol of collectiveness & solidarity throughout 70 years of Paška sirana’s cheese factory existance. Cheese mongers made it in order to dedicate it to all of the workers that made its history through its existence. There are not many families in Pag that didn’t have at least one member working in Paška sirana. This is a big THANK YOU for them and as all families, they remember good and bad times but the fact is that they have built a history of town and island of Pag and that they will continue to build it together.
Ingredients: pasteurised cow’s milk, cheese culture, iodised sea salt (sea salt, potassium iodate), thickener: calcium chloride, cheese culture, rennet, preservative lysozyme (from eggs). Minimum 45% fat in dry matter.
